Slow Cooker Beef Carnitas

Ingredients

2-3 lbs. beef chuck roast

2 teaspoons chili powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cumin

½ teaspoon smoked paprika

¼ teaspoon garlic powder

¼ teaspoon onion powder

1 yellow onion, sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

1 4 oz. can diced green chilis (do not drain)

For serving:

Gluten-free tortillas, shredded lettuce, sour cream, guacamole, salsa (optional)

 

Instructions

1. Heat a small amount of olive oil over medium heat. Add the roast and cook for 5 minutes per side or until it’s browned and slightly crisped.

2. Place roast in the slow cooker. In a small bowl, whisk together chili powder, salt, pepper, cumin, smoked paprika, garlic powder, and onion powder. Sprinkle spice mixture over the roast. Add onion, bell peppers, and green chilis over the top of the roast as well.

3. Cook on high for 3-4 hours or on low for 7-8 hours, or until beef is pull apart tender.

4. Serve with toppings and wrap in tortillas and enjoy!
